Salade van witte kool

An ivory colored, little and sharp one – a mandoline. I know we will become very good friends. And look at the package!
A recipe that can only be made easily with a mandoline.

the salad
1 quarter white cabbage, thin sliced

some watercress or rucola/ roquette
some  fresh mint
2 tablespoon caraway, roasted

dressings 
1 glove garlic
1 teaspoon caraway, roasted
juice of a lemon
salt and pepper
150 ml grape oil or other light vegetable oil 

1. Mix all ingredients for the salad.

2. Put the first four ingredients for the dressing in a high cup and blend until smooth. Pour in the oil slowly until it forms a nicely bound dressing.

3. Pour the dressing – i used two tablespoon- over the salad and let it sit for a while so the flavors can mix.
