I already mentioned quinoa. It’s rich in protein, vitamin B2 and E and many more, superfood! If you don’t like the taste of quinoa, just mix it with some bulgur – like I did with these patties.
They are delicious! But the next time I will only add some finely chopped peppers – it need some spicyness.
Six patties – for 2 or 3 persons
170 gr quinoa, cooked
2 organic eggs
1/2 teaspoon sea salt
2 tablespoon fresh chives or parsley, finely chopped
1 small onion, finely chopped
15 gr Parmesan, freshly grated
2 gloves garlic, finely chopped
50 gr bread crumbs, plus more if needed
1 tablespoon oil
1. Combine the quinoa, eggs, and salt in a bowl. Stir in the chives, onion, cheese and garlic. Add the breadcrumbs, stir, and let sit for a few minutes so the crumbs can absorb some of the moisture.
2. At this piont, you should have a mixture you can easily form into six 2,5 cm thick patties. I err on the very moist side because it makes for a not-overly-dry patty, but you can add more breadcrumbs, bit at a time, to firm up the mixture, if need be. Or moisten the mixture with a beaten egg or water.
3. Heat the oil in a large, heavy skillet over medium-low heat, add 6 patties or less, and cook for 7 to 10 minutes, until the bottoms are deeply browned. Turn up the heating if there is no browning. Carefully flip the patties and cook the second sides for 7 minutes, or until golden.
