Pompoen soep

For four persons – Pumpkin soup
1 kilogram pumpkin
1 onion
2 small potatoes
2 gloves of garlic
1 tablespoon corianderseeds
2 teaspoon cumin
2 vegetable stock tablets
1 liter water
salt

Cut the pumpkin into large chunks, remove the seeds and cut into pieces further. Use a breadknife, it is much easier to cut it.


Peel and chop
the onions. Peel the garlic and press them out. Peel the potatoes and cut them into pieces.

Heat oil in a saucepan and fry the onion and garlic 5 minutes until they soften. Add the cumin with coriander and fry for 2 minutes. Add the pumpkin pieces with potato and the vegetable stock.

Bring to a boil and let simmer on low heat 15 minutes until the squash and potatoes are tenderBlend the soup.

Season it with salt, some fresh herbs like coriander leaves or parsley and add some creme fraiche if you like.
